• First light your fire, then put 500g blackberries, 500g choppedblackberryandapplejam cooking apples, juice of 1 lemon and 100ml water in your Kotlich and hang over the fire.

  • Simmer merrily 10-15 mins until tender and reduced.

  • Add 1k of jam sugar, raise the kotlich up away from the fire a little to reduce the heat, melt the sugar, stiring regularly to prevent sticking.

  • Once the sugar has all disolved boil rapidly for 5 mins or more. Test for setting.

  • Leave to cool for 30mins, stir, pot into sterilised jars and label.
